This is just a simple 3 chord blues, but sliding up
into the E5's can be effective to create a similar
atmosphere to the sitar drone. I've placed all E5's
on the lyric where the chord should be emphasised

Other lyrics I've seen have the last line of Verse 2
as 'payroll', but watching the video mentioned in
my header info, he's making an 'F' sound,
it's 'faro' (pronounced 'pharoah').
 
'Faro' being an old rural Mississippi synonym for
'girlfriend' or lover, sometimes spelt as 'fairo'.
It's clear origins are debatable, but some have
speculated it may be short for 'fair brown'.
There is also an old card game also called Faro, or
Pharoah, a gambling  game that's simpler than poker,
so it's easy to learn. Perhaps it then became used as
a misogynistic term for a 'sassy' woman, who's quick
and easy, and you're likely to loose your money to.
It hardly sounds like a term of endearment to
modern ears, but this was the 1920's blues era.
 
The oldest known recorded use of 'faro' in a
blues song is in 1926, in Peg Leg Howell’s
'Tishamingo Blues', he sings, 'I got a loving faro,
she's long and tall like me'.
 
Canned Heat took their band name from Tommy Johnson's
'Canned heat blues'. Johnson had used the same term
'faro' in some of his songs too,  and his high vocal
style was also an influence on this track.
